Slow Cooker Cream Cheese Chicken Chili
I know what you’re thinking..it’s hot outside and not really chili weather, but honestly, I eat this all year round. It’s not your typical chili and It’s super easy to make using only the slow cooker and a few ingredients. I have been making this recipe for years!
I wish I could take full credit for this recipe, but I cannot. My sister shared this recipe with me from plainchicken.com several years ago. She has some really great recipes on her site, and this has been one of my favorites.
We hardly ever have any left over of this after I make it, but if we do its even better the next day! All you need for this recipe are frozen chicken breast, black beans, cream cheese, a can of corn and rotel. You can find the full recipe here.

For this recipe, I added a couple more chicken breast than the original recipe suggests because I like it a little thicker. You could also wrap this in a tortilla shell if you didn’t want to eat it like a soup, but I usually eat it just the way it is. What are some of your favorite easy go-to slow cooker recipes???
