Crockpot Cowboy Casserole
If you’re looking for a hearty meal in one recipe, that’s also delicious, then you have to try this crockpot cowboy casserole! This is a favorite recipe, that has been in our dinner rotation for years.

Note: In the recipe, I use Cavenders All Purpose Greek Seasoning, which you find here, or at many local grocery stores. It’s one of my favorite all-purpose seasoning mixes, but if you can’t find it, or would like to use another all-purpose seasoning, feel free to use a substitute.
Crockpot Cowboy Casserole
Delicious and hearty casserole made in the crockpot!
Ingredients
- 1 lb ground beef
- 6 medium potatoes (cubed)
- 1 medium onion (chopped)
- 1 tsp garlic (minced)
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) kidney beans (drained and rinsed)
- 1 can (15 oz) corn (drained)
- 1 can (15 oz) diced tomatoes
- 1 tsp garlic salt
- 1/4 cup water
- 4 oz chedder cheese
- salt & pepper to taste
- 1 tbsp cavenders or all purpose seasoning
Instructions

Place peeled and cubed potatoes in the bottom of the crockpot

Add water over the potatoes

Brown ground beef,, minced onion, and minced garlic and add taco seasoning to the meat.

Layer the meat mixture on top of the potatoes

Next add drained kidney beans, drained corn, and top with undrained can of diced tomatoes

Add seasoned salt or cavendars on top as desired

Last 30 minutes of cooking , add 4 oz cheddar cheese on top

Cook on LOW 7-8 Hours
