7UP Cake
I’ve been in the mood for nostalgic and vintage recipes lately. I even have a Pinterest board filled with vintage recipes I want to make!
I also have several of my favorite vintage recipes right here on the blog such as porcupine meatballs, old fashioned goulash, and more.
Vintage recipes can mean different things to different people. For me, it means recipes I grew up with, or that my grandmother used to make.
I think this 7UP cake is the perfect example of a delicious vintage recipe!
There are several different versions of this cake, some using a boxed yellow cake mix, and some with lemon juice, but I like this version the best. It’s actually really simple to make and the flavor is out of this world!
The 7UP in this cake helps to keep it moist, and the lemon extract gives it a great flavor. This cake is perfect for the holidays or to take to potlucks. Actually, it’s so easy to make, it’s perfect any time of the year!
Tip: It’s best to make this in a bundt cake pan that is very well greased and floured to keep from sticking.
*This cake is also great just as it is without the icing, but the icing is simple to make and gives it a nice flavor.
7UP Cake
Vintage 7UP Cake with icing.
Ingredients
- 1-1/2 cups butter (softened)
- 3 cups sugar
- 5 large eggs
- 3 cups all purpose flour
- 2 TBSP lemon extract
- 3/4 cup 7UP®
Glaze
- 1 cup confectioners sugar
- 1/4 cup 7UP®
Instructions

Preheat oven to 325 degrees. Generously grease and flour the bundt pan.

Cream butter and sugar together until smooth. Add eggs one at a time mixing well with an electric or stand mixer after each one. Stir flour in one cup at a time and add lemon extract and 7UP until thoroughly blended and smooth.

Pour the mixture into a well greased bundt pan and bake at 350 degrees for 1 hour 15 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove from the cake pan.
For glaze:

Mix confectioners sugar and 7UP until smooth and drizzle over the cake.
