7UP Cake

Vintage 7UP Cake with icing.

Ingredients

  • 1-1/2 cups butter (softened)
  • 3 cups sugar
  • 5 large eggs
  • 3 cups all purpose flour
  • 2 TBSP lemon extract
  • 3/4 cup 7UP®

Glaze

  • 1 cup confectioners sugar
  • 1/4 cup 7UP®

Instructions

  1. Preheat oven to 325 degrees. Generously grease and flour the bundt pan.

  2. Cream butter and sugar together until smooth. Add eggs one at a time mixing well with an electric or stand mixer after each one. Stir flour in one cup at a time and add lemon extract and 7UP until thoroughly blended and smooth.

  3. Pour the mixture into a well greased bundt pan and bake at 350 degrees for 1 hour 15 minutes or until a toothpick inserted in the center of the cake comes out clean. Remove from the cake pan.

For glaze:

  1. Mix confectioners sugar and 7UP until smooth and drizzle over the cake.
