This is just your basic, but oh so good, stuffed pepper recipe. Even better because it’s made in the crockpot! These are always a big hit at my house, and so easy to make!

Stuffed Bell Peppers in the crockpot

Delicious classic stuffed bell peppers made in the crockpot!

Ingredients

  • 5-6 large bell peppers, any color
  • 2 cups cooked rice
  • 1lb. ground chuck
  • 1 can (15 oz) diced tomatoes
  • 1/4 cup ketchup
  • 1/2 tsp Worcestershire sauce
  • 2 cups shredded cheddar cheese

Instructions

  • 1.cut tops of bell peppers and remove seeds, then place in slow cooker
  • 2.brown ground chuck over med heat until cooked thoroughly and drain
  • 3.in medium size bowl mix cooked ground chuck, cooked rice, cheese, diced tomatoes, ketchup & Worcestershire sauce
  • 4.fill each bell pepper with meat mixture
  • 5.top with cheese
  • 6.cook on LOW 6 hours
  • To save even more time I use minute rice. I have also seen several recipes that add the ground chuck into the mixture uncooked. However, that is just not my preference, but feel free to do so if you like. 🙂
