Crockpot Cowboy Casserole

Delicious and hearty casserole made in the crockpot!

Cook Time 7 hours

Ingredients

  • 1 lb ground beef
  • 6 medium potatoes (cubed)
  • 1 medium onion (chopped)
  • 1 tsp garlic (minced)
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (15 oz) diced tomatoes
  • 1 tsp garlic salt
  • 1/4 cup water
  • 4 oz chedder cheese
  • salt & pepper to taste
  • 1 tbsp cavenders or all purpose seasoning

Instructions

  1. Place peeled and cubed potatoes in the bottom of the crockpot

  2. Add water over the potatoes

  3. Brown ground beef,, minced onion, and minced garlic and add taco seasoning to the meat. 

  4. Layer the meat mixture on top of the potatoes

  5. Next add drained kidney beans, drained corn, and top with undrained can of diced tomatoes

  6. Add seasoned salt or cavendars on top as desired

  7. Last 30 minutes of cooking , add 4 oz cheddar cheese on top

  8. Cook on LOW 7-8 Hours
