Crockpot Stuffed Bell Pepper Soup

Ingredients

  • 1.5 lb ground beef
  • 1 large bell pepper (your choice green, red or yellow) chopped
  • 1 small onion, diced
  • 1 Tbsp garlic
  • 1 tsp oregano
  • 2 cans (14 oz each) diced tomatoes (untrained)
  • 2 cans (15 oz each) tomato sauce
  • 2 cups beef broth
  • 1 cup water
  • 1 cup rice (uncooked)

Instructions

  1. Brown ground beef, onion, and garlic. Drain grease, and add to the crockpot.

  2. Add the chopped bell pepper, oregano, diced tomatoes, tomato sauce. beef broth, water, and uncooked rice. Stir the ingredients.

  3. Cook on Low 6-8 hours.
