Stuffed Pepper Soup
I’m a huge fan of stuffed bell peppers, but my favorite part is the tomato, rice, meat mixture inside the peppers. I always save a little of the mixture when I make my Crockpot Bell Peppers and it is sooo good, even by itself!
If you love stuffed bell peppers as much as I do then you will love this stuffed pepper soup! It has all the flavors of stuffed bell peppers, only in a yummy soup! Not to mention, it’s super easy to make!
It’s delicious topped with cheese!
Crockpot Stuffed Bell Pepper Soup
Ingredients
- 1.5 lb ground beef
- 1 large bell pepper (your choice green, red or yellow) chopped
- 1 small onion, diced
- 1 Tbsp garlic
- 1 tsp oregano
- 2 cans (14 oz each) diced tomatoes (untrained)
- 2 cans (15 oz each) tomato sauce
- 2 cups beef broth
- 1 cup water
- 1 cup rice (uncooked)
Instructions

Brown ground beef, onion, and garlic. Drain grease, and add to the crockpot.

Add the chopped bell pepper, oregano, diced tomatoes, tomato sauce. beef broth, water, and uncooked rice. Stir the ingredients.

Cook on Low 6-8 hours.
