Slow Cooker Honey Balsamic Chicken & Vegetables

Ingredients

  • 2 cups fresh brussel sprouts (trimmed and halved)
  • 2 cups baby red potatoes (halved)
  • 2 cups baby carrots
  • 1 small red onion (sliced)
  • 4-5 boneless skinless chicken breast (can use frozen)
  • 1/4 cup balsamic vinegar
  • 1/3 cup chicken broth
  • 1/2 cup honey
  • 1 tsp ground mustard
  • 1 tsp rosemary
  • 1 tsp oregano
  • 1/2 tsp red pepper flakes
  • 2 tsp garlic

Instructions

  1. Place Brussel sprouts on one side of the crockpot. Next, place carrots, potatoes and red onion in the crockpot.

  2. Place the chicken breast on top of the vegetables.

  3. In a medium sized bowl mix together balsamic vinegar, chicken broth, honey, ground mustard, rosemary, oregano, red pepper flakes, and garlic.

  4. Pour the balsamic marinade on top of the chicken and vegetables and cook on low for 6 hours.
