Slow Cooker Honey Balsamic Chicken & Vegetables

This tangy, sweet, and savory balsamic chicken and vegetables is a meal and one and sure to be a hit at your house!
What makes this recipe even better is, that it’s made in the slow cooker for 6 hours to really bring out the flavor of the balsamic vinegar, honey, and herbs.
Layer the red potatoes, Brussel sprouts, red onion, and baby carrots in the crockpot. I use this 6 Quart Crock-Pot
Place the chicken on top of the vegetables.
In a medium-sized bowl mix together balsamic vinegar, chicken broth, honey, ground mustard, rosemary, oregano, red pepper flakes, and garlic.
Pour the marinade on top of the chicken and cook on low for 6 hours.

Ingredients
- 2 cups fresh brussel sprouts (trimmed and halved)
- 2 cups baby red potatoes (halved)
- 2 cups baby carrots
- 1 small red onion (sliced)
- 4-5 boneless skinless chicken breast (can use frozen)
- 1/4 cup balsamic vinegar
- 1/3 cup chicken broth
- 1/2 cup honey
- 1 tsp ground mustard
- 1 tsp rosemary
- 1 tsp oregano
- 1/2 tsp red pepper flakes
- 2 tsp garlic

Place Brussel sprouts on one side of the crockpot. Next, place carrots, potatoes and red onion in the crockpot.

Place the chicken breast on top of the vegetables.

In a medium sized bowl mix together balsamic vinegar, chicken broth, honey, ground mustard, rosemary, oregano, red pepper flakes, and garlic.

Pour the balsamic marinade on top of the chicken and vegetables and cook on low for 6 hours.
