Sweet Vanilla & Brown Sugar Pumpkin Seeds
We recently carved our Halloween pumpkins. Which, in all honesty, turned into me cleaning out all the pumpkin guts, while the kids watched, and then their dad carved them.
The kids were so excited with the end result though, and they turned out pretty cute!
Afterwards, we made these delicious vanilla & brown sugar pumpkin seeds!
The kids are still a little too young to carve their own, but my 7-year-old did an awesome freehand drawing of a cat face on her pumpkin that was then cut out.
After all that carving, we had tons of pumpkin seeds. So, I put them to good use and baked them.
Besides being delicious, pumpkin seeds have tons of nutritional value, and contain tryptophan which can encourage restfulness and may help you sleep better.
I actually made this sweet version featured here and a more classic savory version that I will also share on the blog shortly. Both turned out really good!
First, you will need to remove all the pulp from the pumpkin seeds. Next, I like to place them on a cookie sheet to dry out some overnight, before baking them the next day.
Vanilla & Brown Sugar Pumpkin Seeds
Sweet and crunchy baked pumpkin seeds.
Ingredients
- 2 cups pumpkin seeds
- 4 Tbsp melted butter
- 2 Tbsp brown sugar
- 1 tsp vanilla extract
Instructions

In a medium sized bowl mix together pumpkin seeds, melted butter, brown sugar, and vanilla extract.

Transfer coated pumpkin seeds to a baking sheet or silicone baking mat and bake in the oven at 275 degrees for one hour. Stir every 15-20 minutes while baking to keep the seeds from sticking together.
